Day 2

So...what's new in Debbie World? I started a new diet yesterday (The Metabolism Miracle). Going well so far except for a chocolate chip cookie and sesame cracker infraction last night (yes, on DAY ONE). I felt bad because last week I asked my friend to make some cookies for our young-adult fellowship group. At the time, I had no idea that I would be on a low-carb diet. Whoops. Anyway, luckily they were small, and I only had two. One of the two offenders gave me an awful headache, so I don't think I'll be breaking the rules anytime soon.

Breakfast today was something new: "Miracle" Silver-Dollar Pancakes made with soy flour, ricotta cheese, eggs, Splenda, and a couple other ingredients. Pictures below.

The batter. It wasn't this yellow in real life (the colors are skewed).
Looks like regular pancake batter!

Hmm. Cooks up like a regular pancake too.

The other five in a portion. I think they're probably a little bigger than a silver dollar. I haven't seen a silver dollar in a long time, so I had to do my best guesstimate.

Finis! Yeah, I burnt one pretty good, as well as the bacon. Still delicious! So that was six "silver-dollar" low-carb pancakes, one egg, and two strips of center-cut bacon.
Plus a cup of herbal tea (not pictured). Yum-O!

I devoured it too fast for a pic of me eating. Then again, who wants to see a picture of me eating?
